Bristol’s festival of all things barbecued now has a permanent spot at St Nic’s Market. Grillstock offers hungry meat eaters 12-hour pit-smoked pulled pork roll and coleslaw (£3.50), and hickory-smoked baby back ribs (£3.95), and was already attracting plenty of customers on its first day of trading today.
All the pork comes from Ruby & White butchers on Whiteladies Road, with future plans including gravy-dipped brisket rolls, slow cooked ox cheeks, grilled tri-tip beef sandwiches and brisket burnt-ends chilli.
First impressions are smoking.
